Responsible for overseeing the entire food and beverage cost control process and ensuring effective implementation of cost-saving measures. You will also be responsible for providing strategic guidance to the management team on pricing strategies and cost management initiatives.
Key Responsibilities
- Oversee the preparation and analysis of daily food and beverage costs and recommend cost-saving alternatives to improve overall profitability.
- Conduct periodic food and beverage spot checks to ensure inventory accuracy and compliance with established controls.
- Establish and maintain a comprehensive database for food and beverage inventory stock, including up-to-date pricing, and ensure that all relevant stakeholders have access to this information.
- Develop and implement a cost allocation transfer system for food and beverage supplies to the various departments and regularly summarize these transactions for each financial period close.
- Calculate all food and beverage costs and input these costs into the point of sales system to generate monthly potential food and beverage cost of sales reports.
- Track the status of both food and non-food inventory to ensure adequate supplies are available and provide recommendations for ordering as necessary.
- Price all food and beverage storeroom requisitions and compute Monthly food and beverage actual costs by outlet and Monthly storeroom variances for food and beverage.
- Provide guidance and support to the F&B management team on menu costing to establish menu item sale prices and ensure that all menu items are properly rung up in the system.
- Establish and monitor the operational controllers in the catering/restaurants, food and beverage outlets, in Menu Items (ensure that they are properly rung up the system), Operation inventories and reconciliations, Point of Sale system user capabilities and controls etc.
- Ensure effective portion control to minimize waste and maximize profitability.
- Prepare F&B reports as requested by management and provide strategic insights on pricing strategies and cost management initiatives.
- Update all databases relating to GCC outlets and ensure that all stakeholders have access to accurate and up-to-date information.
- Perform other job-related duties as assigned by management.
- Maintain discretion and maturity in handling sensitive or confidential data.
- Work closely with different departments and stakeholders to ensure effective implementation of cost-saving measures and pricing strategies.
Skills
Minimum 8 yrs. experience in same field.
Education Qualification
Minimum a bachelor’s degree in Commerce/HM
