Responsible for training execution for existing recipes (drinks & food products) and new developed recipes to ensure preparation and food quality achieve the desired results as per the brand standards and guidelines.
Support in menu re-engineering and menu development across the brands.
Duties and responsibilities but not limited to the below:
- Prepare an annual training calendar for the Operations team.
- Plan and arrange schedules for technical training and liaise with Area Leaders for nominees for refresher training for existing recipes before launching any new recipes.
- Prepare and update training manuals as per the brand standards and guidelines.
- Conduct training with the CK team to prepare new recipes with step-by-step procedures through live demonstrations.
- Access and provide feedback to CK team after the technical training to ensure the accuracy of preparations.
- Conduct training for Operations team for final (assembly) preparation of new recipes with step by steps procedures by live demonstrations.
- Conduct weekly quality checks in stores to ensure product handling are properly done such as receiving goods from suppliers, food storage in stores, product knowledge and formulation, production state/execution of work, consistency of production, hygiene level, labeling and packaging in compliance to brand standards and guidelines.
- Conduct training sessions for all new employees as per the training manual.
- Coordinate with external Chefs to develop recipes during collaborations.
- Prepare and submit monthly report for overall products handling and performance.
- Support the I & D in menu re-engineering and develop new recipes across the brands.
- Check and follow the annual commercial calendar (NIT) for seasonal products and for new product launches and parallelly work on archived recipes.
- Conduct market research and propose the feasibility of new recipes to the Line Manager for approval or archive for future review.
- Update existing recipe cards and create new cards for new launches recipes.
- Draft instructional manuals for new and existing products and get approval after final confirmation.
- Calculate the cost for new recipes and liaise with the Kitchen Manager for confirmation and uploading cost on NetSuite.
- Conduct packaging trials for new recipes for delivery and dine-in.
- Coordinate with the Procurement team for ingredients and utensils/equipment needed for new recipes after finalization.
- Perform other tasks assigned by the Line Manager as and when required.
Skills
- 3 to 5 years of experience as a Barista trainer. (Technical training)
- Knowledgeable in food and beverage development, food safety and storage.
- Understand basic calculations for food costing.
- Understand market trends in the F&B industry.
- Strong in research, presentation, and reporting skills
- Proficient in MS Office tools.
- Excellent verbal and written communication.
- Attention to detail.
- Energetic, creative and self-starter.
- Flexible.
