Commis I – Chinese CuisineWe are seeking a skilled and disciplined Commis I – Chinese Cuisine to support the preparation and delivery of authentic Chinese dishes within a four- or five-star hotel or luxury dining environment. This role is suited to a culinary professional with solid experience in Chinese cooking techniques who is ready to take on greater responsibility within the kitchen brigade.

As Commis I – Chinese Cuisine, you will work closely with senior chefs to ensure consistency, quality, and efficiency in the Chinese kitchen, contributing to high standards of taste, presentation, and hygiene.
Key responsibilities include:
- Preparing and cooking Chinese cuisine dishes in accordance with approved recipes and standards.
- Supporting mise en place and ensuring readiness for service across the Chinese kitchen section.
- Applying correct cooking techniques such as stir-frying, steaming, braising, roasting, and wok cooking.
- Maintaining consistency in portion control, taste, and presentation.
- Assisting senior chefs during service to ensure smooth and timely food delivery.
- Ensuring strict compliance with food safety, hygiene, and HACCP standards.
- Maintaining cleanliness and organization of workstations, equipment, and storage areas.
- Supporting proper food storage, labeling, and FIFO practices.
- Minimizing food wastage and following cost-control guidelines.
- Carrying out additional duties as assigned by the Chef de Partie or Sous Chef.
What we are looking for:
- Proven experience as a Commis I or Senior Commis Chef – Chinese Cuisine, preferably in a four- or five-star hotel or upscale Chinese restaurant.
- Strong knowledge of Chinese ingredients, sauces, and traditional cooking methods.
- Experience with wok cooking will be a strong advantage.
- Good understanding of kitchen hygiene, food safety, and discipline.
- Ability to work effectively in a fast-paced, high-standard kitchen environment.
- Good communication skills in English; Mandarin or Cantonese will be an advantage.
- Strong teamwork, reliability, and attention to detail.
- Flexibility to work shifts, weekends, and public holidays.
- Culinary or professional kitchen qualifications will be an advantage.
